The Bar Graph Index presents an overview of consumption from 1640-1688 grouped by “category.” Category is determined both by a food type determined by Dr. Taylor-Poleskey (fish, meat, birds, etc.) based on how the court clerks grouped the foods in the annual account books and by the type of measurement. This overcame the problem of comparing apples to applesauce, or as in this case, absolute numbers of fish to vats of pickled fish (Stof or Pfund).
